Simple Cooking for Busy Folks

Couldn’t really come up with a better title for the post, my apologies. But picture is worth a thousand words right?

Typical Scenario in much of the country:

5:30-6 pm. Kids are playing and perhaps fighting with each other, homework needs to be checked, dogs need to be fed, door bell rings packages being delivered perhaps. Loving mommy is trying to keep it all together…Daddy probably gets home around 6:30- 7. What to do for dinner?

Chicken thighs (try to get good quality chicken for yourself. The bone in skin on thighs are cheap compared to skinless boneless. poultry industry is F%^&$% up…pasture is best, but there re some quality brands out there.) 1 cookie sheet line with tin foil for easy clean up. Preheat oven to 400. Brush thighs with extra virgin olive oil (just a little, 1 tablespoon for 3 thighs.) sprinkle with some “all inclusive” nice seasoning. Tony’s is an option if you like it. Perhaps some quality Adobo, We like this ONE

Next cookie sheet (tin foil for easy clean up) line with fresh asparagus,  brush with extra virgin olive oil, sprinkle with salt and pepper and a tiny sprinkle of parmesan.

In the oven they go. 15-20 minutes for the asparagus. 30 minutes for the chicken.

As you can see from the picture, simply sliced up an half an avocado and used a 1/4 of it per plate for a little extra flavor and good fat. Tasty stuff!!!
