Satisfying Meals & Supplement # 2

I know, I know, I keep talking about it. But the reality is that if you prepare satisfying meals, you can easily keep your ingredients in check, and STILL put a delicious meal on the dinner table in line with your specific life style choices and goals.

Here’s last night’s dinner:

Shrimp, Caulliflower with onions and peppers. And a cucumber, tomato and sweet onion salad, sprinkled with queso fresco. Lemon juice and olive oil dressing.

Get creative, many ways to prep a simple meal like this. 1 hour prior to cooking toss your shrimp with a bit of olive oil, garlic salt and chili powder. After an hour, you can saute them up quickly in a pan. Don’t over cook them. I had the grill going, so I just put a piece of tin foil on the grill, and prepared them on the grill on the tin foil. While the fire was getting hotter and hotter, I also put one whole caulliflower on there with a bit of olive oil, garlic salt and chili powder. Closed the lid, and let the cauliflower cook a bit and absorb some grill flavors.When I put the shrimp on, I chopped my cauliflower into crumbles and after sauteeing onions and peppers added the cauliflower and a pat of butter. Sprinkled the dish before serving with some cut scallion and a small sprinkle of good parmesan cheese. For all strict paleo/primal readers, the dairy (queso fresco and parmesan)is so minimal, but adds huge flavor and more important, “good taste” that satisfies. Aged cheese should be a part of your diet if you can handle the dairy. It’s really like a “traditoinal European fermented food”. (K2 source also)

People that don’t think they like cauliflower, will gladly devour the above with you, from my experience 🙂

Raw Organic Apricot Kernels

Without getting too technical (and I want you to do some of your own homework, and get familiar), Years ago there was all this crazy hype (late 70’s even) that raw bitter apricot kernels could be a treatment for cancer as the compounds SEEM to act as powerful cancer cell inhibitors. High levels of laetrile (vitamin B17), have been proven to inhibit tumor growth.  There is even a good amount of evidence to support that when laetrile comes into contact with an enzyme called beta-glucosidase (which is only found in cancer cells), the laetrile is broken down, releasing “manufactured” hydrogen cyanide (HCN), which attacks the cancerous cell. Normal cells remain unaffected because of the mitochondrial enzyme rhodanase, which detoxifies the cyanide component. Cancer cells lack this enzyme.

So look at this VERY inexpensive supplement as a “preventative measure”. After much reading, I strongly feel this could be a very useful addition to your eating of REAL FOODS. Especially, if you like to “work out” a lot, or have a relatively stressful work/life existence.
We toss a few kernels in our green smoothies regularly.
Pay attention, nature is powerful stuff and can pack a punch as we know. Start slow taking the apricot kernels. Follow the directions. Too much too quick is no buenno ok?
Again, an inexpensive way to potentially provide your amazing body with some extra juice…errrr…. seeds 🙂

As long promised, especially to reader Matt, I will post about the supplements my wife and I believe, do actually work, regardless of the hype or negativity around said supplement. Supplements that we think, aleviate some of the stress pf daily life and of course raising NUT JOB KIDS.

Instead of putting them all in post, I figured lets do one per post, I will be inclined to perhaps go in depth a little further, and perhaps we can also have some back and forth discussion and sharing of experiences. I will also show you only the EXACT product I buy and where to buy it. Disclosure, I do NOT receive any commission for you clicking the links or buying product from the vendors I share. Totally unbiased feedback, after having sampled many many brands over the years. I am not an MD, please be responsible and do your home work, if you are on medications. Natural supplements are powerful, and some DO interfere the effectiveness and goals of daily necessary medications.

So without further ado, here’s the first one.

MACA POWDER

From the website of this retailer a decent general description of Maca powder: “Maca root has been used in indigenous Andean societies as a source of nourishment and healing for thousands of years, and continues to be one of the most appreciated superfoods today. Used to increase stamina, boost libido, and combat fatigue, maca root has long been regarded as a highly adaptogenic and powerful food. With an earthy taste that is slightly nutty with a hint of butterscotch, a little maca goes a long way.”

Ok, so there are two types available in powder form, gelatinized and raw. The gelatinized version is easier to absorb I think, because the maca has been heated (cooking off some starch). This makes sense for me as the Peruvians did NOT eat Maca raw. Just a thought, but totally your choice.

Ok one more, sorry…I’m crazy about her…….

Maca powder is an adaptogen and hormone regulator. Trust me, it’s powerful stuff steeped n history for 1000’s of years as an integral part of traditional and early advanced cultures in the region where it’s from.

Build up slowly when you start taking maca. A little goes a long way. of course all the research and anecdotes and all the books and websites that try and sell you some, love to market this “magic” supplement. There’s nothing magic about it, it’s very much like Ginseng from a different part of the world, but in my experience better. FAR BETTER.

For both of us, there is a distinct sense off well being, when we take it. Recovery after exercise is markedly better and provides a very noticeable “energy lift” for the day. As with ALL SUPPLEMENTS, make sure you take breaks from it, this seems to only increase it’s effectiveness paradoxically.

Thoughts & Food

I’m ALIVE!!! Thank you everyone for your patience with this blogging slacker…

The last 6 weeks with my leg have been a bit of a ride, and my mobility in the kitchen with crutches, juggling boiling water or a hot pan hasn’t been easy.

So I’ve been making simple easy dishes. Strangely, my appetite has really not been all that great. I’ve for sure lost a bunch of muscle in my left leg, as well as generally for the whole body, especially my chest, shoulders and biceps. The latest research about “sitting kills” is most likely spot on.

I’ve spent marvelous days just sitting around though, speculating, reading, thinking, meditating, comparing, recalling, calculating, planning, and the list goes on. I’ve been able to spend time kind of digesting mountains of information I’ve been accumulating for the last 8 years about exercise and nutrition.

It’s been nice. All this thinking (and re-reading of so many quality posts, studies and articles) has allowed me to even further the direction of my “OWN” path. It is so VERY important for our well being, that we find “our own way”. It’s no different, from all the great guitarists….they found their OWN way. They all have a unique sound that’s just them. For the vast majority of them, they ALL started the same way. With the BASICS. They internalized those basics, and formed their own way. Exercise and Nutrition work the same. Stick to the basics long enough so that the basics are a part of you…then you can start fine tuning and making your own way. The majority does not make their own way. You know why? Because they don’t have the metal to stick to the basics long enough. The boring stuff, the basics, are just too hard. i.e: they want move on quickly and  play “all along the watchtower”, but they haven’t quite mastered putting chords together and can’t quite yet play “mary had a little lamb”.

I just posted a list of basics in a comment recently on Chris Highcock’s Site. Here’s what I listed:

1. Be happy
2. Love family & friends & neighbors like crazy
3. Eat REAL food, go hungry sometimes
4.Walk EVERY day
5. Exercise in line with what excites you and it will never be exercise to you. Do this 3 times a week
6. Lift heavy things 2 x a week
7. Stay curious
8. Stay vain, remember at some point in your youth you thought you were the shit, dont ever let go of that feeling, as you age you will realize we are ALL the shit, knowing it and holding on to it will, will give you confidence.
9. STAY sexually active. It’s part of our make up. Millions of married couples in the U.S.A dont even sleep in the same bed anymore. Human touch, cuddling is one of the major requirement for our well being.
10.Realize that in the END everything will be alright, if it’s not alright than it’s not yet the end.

Simple right? Once you truly “own”, a basics list like this,  can you expect to start really “hacking” yourself. And just as a thought….that’s not for everyone you know. Most are fine with just the basics and don’t want to spend their life agonizing if they really need to take extra calcium together with their Vit. D supplement.

But the basics are easy enough for us ALL to pick up on at least, and this is what’s so amazing for me over the last 8 years…. THE BASICS ARE ALL YOU NEED TO SEE HUGE IMPROVEMENTS IN OVERALL HEALTH AND WELL BEING. 

Dinner last night was pretty easy, straight forward and delicious. For strict paleo, or if you don’t handle dairy, just skip the little cheese sprinkle at the end of the recipe.

These little stuffed zucchinis are simply YUM

1 pound of ground pork or pork sausage

3 zucchinis

4 green onion stalks

2-3 large hand fulls of fresh spinach (hand size taken into consideration 🙂 )

1 tomato

1 medium onion

4 cloves garlic

1/4 of a hot pepper (jalapeno, serano, chilli) optional or toss in the whole pepper if you like it spicy

1 tsp butter

1/4 tsp garlic powder

salt & pepper to taste

Let’s cook….quickly.

Saute your onion and garlic in the butter. When translucent, add your pork and your garlic powder. (of course you can use ground beef or ground lamb too) While the meat cooks, (make sure you break it up in little pieces), cut your zucchinis in half LENGTHWISE. Take a spoon and empty out the inside of the zucchini pieces. (discard the flesh, a lot of recipes have you use the flesh back in with the meat, but from my experience this makes it too wet.)

Next dice up your tomato and scallion/green onion stalks. Preheat your oven to 350.

When the meat is done add in your spinach and combine well so spinach wilts. Scoop your little zucchini boats full of your meat mixture. Next top with some tomato and scallion. In the oven they go for about 15 minutes. The zucchini needs to cook, but you want to make sure you still have a little “snap”/”crunch” in your zucchini. This really adds to the flavor and consistency of the dish. Mushy zucchini is on par for me with boiled brussell sprouts. When it’s almost done sprinkle a bit of shredded or diced cheese of your choice. I used a bit of sharp cheddar but feta works well as does parmesan or pecorino. When the cheese is melted sprinkle a bit more of your chopped scallion on top and voila.

One more thing…

I really want you to closely read this a few times and give it some thought:

Super Quick Spinach Salad Meal

This one is so easy and so good, let’s give it a go:

Serves 4

1 to 1.5 pounds of beef boneless short ribs is what I used but many many cuts will work for this

4 normal sized cloves of chopped garlic

2 tblsp dijon mustard

1/4 cup heavy cream

2 tblsp butter

2 tblsp worcestire sauce

salt and pepper to taste

3 cups fresh spinach or baby spinach

 

Slice your beef into little 1 inch strips. Get your pan nice and hot. Add 1 tbsp of butter and add the chopped garlic, saute quickly and now add the beef. Saute the beef. Here courtesy of recipes.com, take a look for easy do’s and don’t’s for sauteing some beef.

Make sure your pan is hot and your fat of choice is hot. That means there needs to be a sizzle when the beef hits the pan.If you are using butter make sure it doesn’t burn.

The pictures are pretty self explanatory. The liquid being added is to “deglaze”, the pan, you can use white wine, red wine, a bit of broth, sake, beer many things. Once deglazed you can add a bit more butter or heavy cream to make the sauce. cooking time of the beef (why you want to keep it thin pieces) is only 2-3 minutes on high heat.

Once you’ve added the meat add your worcestire sauce, combine and than add your dijon mustard, combine well. When you have about 30 seconds left add your cream and again combine well. Cook for another 30 seconds and take off the fire. fill a large and nice serving bowl with your fresh spinach and put the contents of your pan over it. Toss together well and enjoy. The heat from the sauce and the meat will wilt your spinach perfectly.

Attitude and the World’s Best Margarita

I wanted to share this quote with you all today;

I remember like yesterday listening to a well known tennis coach when I was 14 years old. I had the privilege of spending some quality time with him at that young age. (he was a big influence in my life). He always said ‘attitude is everything”. He was so convinced about the power of ones attitude, that he for years lobbied national school boards about classes teaching “attitude”. When that didn’t go anywhere, he changed the request to teach classes in “common sense”. He’s an amazing public speaker and motivational author. (his name is Peter Burwash)

How we feel, our “attitude” about our current situation actually creates our own reality. So take the quote above to heart, make the best of it and watch your future unfold exactly the way your creating it. This is powerful stuff, look into it.

Ok, lets DRINK 🙂

I promised you a while back that I would share how to make the worlds best tasting margarita remember? (well I’m taking credit, but it’s really my beautiful wife that creates this delicious beverage.)

This is what you will need to put into your blender:

1 peeled orange

1 peeled lime

1 peeled lemon

6 ounces good tequila

2 ounces Cointreau or Gran marnier

4 drops of liquid stevia

4 cups of ice

This serves 6 to 8 people. Or two 🙂

As you can see, the Vitamix is our blender of choice. I saved up for a sous vide machine, but never ended up buying it. I’m SO glad I spent the money on the Vitamix, it is truly a wonderful and amazing machine. I’m continuously amazed at how well it works and the things I’m able to create with it. (don’t worry this recipe will work perfectly in a regular blender)

Simplicity and the Healing Power of REAL FOOD

Most of the time, the old K.I.S.S. expression is so valuable because it covers the basics. From working out, to eating right, stick to the basics and you will be way ahead in the race and already far removed from the pack.

Here’s dinner.

This type of meal is is what it’s all about for me these days. Nothing but real food, simply prepared, delicious and satisfying.

In a crock pot, add 1 whole chicken with a nice spice rub of your choice. Add a few cloves of garlic, 1 onion, a few carrots and optional we added some squash and zucchini also. Slow cook it for 6-8 hours. Scoop the “gravy”/natural juices out of the pan into a bowl. About 4 halved red potatoes simply roasted in the oven and a salad to go with the meal. I did add a bit of butter to my potato and enjoyed a glass of shiraz.

 

Yesterday the Doc took my staples out of my leg. The incision wound (10 staples) healed unbelievably well and the nurse and the doc couldn’t believe that it had already scabbed over which they said was earlier than normal. What amazed me (and the doc) the most, was that my fracture had already healed on the fibula side where they fixed the plate and screws. I will try and take a picture today of the printout of the xray and you can see for yourself. The fracture is no longer visible. The doc was pretty excited about this. The break occurred 4 weeks ago.

With all the recent Paleo Drama, bickering and posturing, I feel stronger than ever and agree whole heartily with Richard Nikoley and his wonderful summary/explanation of a paleo “THINKING”. The great quote from Richard’s post ” It’s a state of mind, a way of thinking about all the choices you have to act upon. There are no absolutes, there’s only for better or worse. That’s it. That’s really the whole basic formula.”

For better or for worse…..
